How to soften onions without burning them.

If the edges are going dark while the middle stays firm, your pan is asking for less heat and a little moisture.

The reliable method

  1. Cut the onion into mostly even pieces. They do not need to be restaurant-perfect.
  2. Warm a little oil over medium-low heat.
  3. Add the onions with a small pinch of salt and stir.
  4. Cook gently, stirring now and then, until soft and translucent.
  5. If the onions colour before softening, lower the heat and add a splash of water.
The tiny rescueA tablespoon or two of water cools the pan, loosens browned bits and gives the onion more time to soften. Let it evaporate, then continue gently.

Why even pieces help

Large chunks and tiny pieces cook at different speeds. “Mostly even” is enough: it keeps the small pieces from burning while you wait for the big ones.

When are onions soft enough?

They should bend easily and look translucent rather than raw and chalky. For a sweet base, keep going gently. For intentional browning, raise the heat only after they have softened.
